April 29th, 2009: Dinner

You know you’re a blogger when you start composing the post in your head way before you even sit down to write it. :p

Today’s dinner was super simple.  I wanted some veggies and a quick salad was in order. Especially since I haven’t had one yet today.

Salad...

Salad...

The salad was:

  • Mixed Greens
  • Spinach
  • Romaine
  • Carrots
  • Black beans
  • Raisins
  • Sunflower and pumpkin seeds

Sounds a little odd but it was really good!

Sweety

Sweety

With half a baked sweet potato on the side with some butter and cinnamon sugar.  The salad was dressed with a yogurt version of “Caesar Parmesan” which is a redundant name right?  I mean one of the main ingredients in Caesar dressing is parm.  So to say something is a “Caesar Parm” dressing is sort of overstating the obvious.

Stamp-out and abolish redundancy!

;)

All together...

All together...

P.S. I ate the right 1/2 of the potato.

I thought the raisins would be weird but I wanted something to give the salad a little bit more chew and provide some sweetness.  Cranberries were out because they would be too sweet, so raisins were the next choice.  It ended up not being odd at all!  It did exactly what I was looking for, provide sweetness and some chew.  Even eating raisins+black beans did not seem or taste weird.  Hooray for crazy food concoctions!

Scott who goes with the flow and will eat whatever I give him, got the same salad sans raisins.  I just didn’t think he would dig it.  He thanked me for the omission and said that was the right choice.
