April 24th, 2009: Breakfast and lunch

Hi guys!  Wow what a beautiful day in Columbus!  Here’s hoping it lasts.  Some people further out west are getting snow right now and um, that’s not something I like hearing at this time.  For now it’s time to enjoy it. :D

I flip-flopped on doing a light run and no run today.  I ended up taking a rest day, don’t want to push myself too hard right off the bat.  I have MT tomorrow and then my long run on Sunday so in terms of exercise I think it will work out.  I rolled out of bed this morning around 7:30ish and got started on my day.

I had a cup of coffee to get me through some emails, blog, and office duties.  Then I headed up to wake up Scott and get some breakfast.  As I was pulling out things to make for breakfast, I got sidetracked and started organizing the downstairs a little bit.  Slowly but surely I will get this house looking nice.  Then I had breakfast with another 1/2 cup of coffee.

Yogurt!  I was hungry but not hungry enough for oats or oatbran this morning.  I wanted something lighter.  It’s yogurt with:

  • Banana nut granola
  • Cranberries
  • Raisins
  • Frozen blueberries
  • Shredded coconut

Very yummy!  I only had a few sips of coffee.  It was so lovely outside that I opened the office windows.  Ah nice breeze!  I did some more work office things and then I started cleaning the house for it’s weekly scrub down.  Once that was done, it was time for lunch!  Since it’s so warm out I knew that something cool was on the agenda.  Salads for sure and a smoothie!

BBQ Faux-Chicken chopped salad.  Or something. ;)

  • Chopped spinach
  • Romaine
  • Carrots
  • Cucumber
  • Broccoli
  • Quorn chicken tenders
  • Sunflower and pumpkin seeds
  • Shredded cheddar
  • Kidney beans

Dressed with a BBQ dressing made with bbq sauce, and yogurt.  So good!

It was my first time having the Quorn chicken tenders and they were just okay.  A little spongy for my taste.  I like the Morningstar versions better.  What is up with Morningstar anyway, it’s getting harder to find the products in the stores.  Anyone else having trouble?  My WF doesn’t even carry them anymore other than the chicken and beef starters.  That’s it!

It is time for a new blender. My blender just didn’t want to go today making this smoothie and he started smoking again.  I can’t physically see the smoke but I can smell the motor which I’m sure is not a good thing.

  • 1C unsweetened cranberry juice
  • 1 C of water
  • 3 icecubes
  • Big bunch of kale
  • 1 carrot chunked
  • Frozen mango
  • Frozen peaches
  • Frozen pineapple

All blended till smoothie and delicious.  Along with the salad this was an awesome lunch and I couldn’t help but feel good about eating it.  Look at all those colors!  That just screams good for you.  There was about a 1.4 left of both my salad and smoothie, I was so full!

Any recommendations on blenders?  I would love a Vita-Mix but those are majorly expensive and totally out of my budget right now.  I need something that can handle heavy usage and won’t get bogged down just making a smoothie.

We’re going out for dinner tonight for date night.  But first stop is to the running store to pick up my packet for the 1/2!! :O

  1. Darling, with as much as you use your blender and as much as you love your smoothies, don’t you think you *deserve* a nice one? It’s an investment. I mean, I don’t know which one you’re looking at exactly, but if you think about the $400 one, it’s just a bit more than a dollar per day. And if you think about how much smoothies cost at places like Starbucks (about $4.50), then you are really saving money in the end.
