I told you it wouldn’t be long till we had dinner. I was hungry and had lots of options floating around in my wee brain but it came down to not wanting to have a bunch of dishes to wash. I decided on making breakfast for dinner. It’s been a while since Scott and I have had a Sunday style breakfast, so that was on the agenda for this evening.
Blueberry waffles and chicken breakfast sausage. The fruit is already in the waffles! These were my lightest waffles yet made with seltzer and the flax+water combo for the egg part. So yummy! They were so light and airy I went back for more.
I had another small waffle and only half that chicken sausage. Mmmm now I’m full and content.
On the agenda for this evening is:
- Relaxing
- Reading
- Hopefully a leg rub
That’s a to-do list I can manage!
