March 18th, 2009: Dinner (Day done right)

Hi guys!  My day was semi-productive.  Ugh, why can’t I be more motivated to get stuff done around the house?  I procrastinate on that so much.  My downstairs hallway still has paint test marks on it. The reason this is sad is because I have already picked out the paint and purchased it like last year!  Time to get moving on taking care of bidness.  It’s time to get this house in order, I’m tired of feeling like we’re out of place here. It’s coming up on three years in this house and it’s time to make it look that way.  Not like we’re still unpacking!

I’m DONE.  I will be spring cleaning for sure around here!

Whew, now that’s over.  Let’s talk about dinner.  Late this afternoon I got so hungry.  I have no idea why my body wanted to eat because lunch for me was huge. And I was stuffed after it!  I started prepping dinner at my normal time and munched on some raisins and cashews as I prepped. I ate all the cashews but not all of the raisins.  Since we didn’t have fish last night, that was on the menu for this evening.

Hello tuna!  I live for fish night!  I try and keep fish to two nights a week with a possible extra seafood night thrown in (shrimp or scallops for example) but I honestly could probably eat fish every other night.  I love it!  I couldn’t go veg because I couldn’t live without seafood (and cheese and yogurt ;) ).

The tuna was marinated, which will be a recipe soon.  And the side was some broccoli rabe and snow peas mixed with WW spaghetti.  I sautted up the broccoli rabe and snow peas in some olive oil and a bit of chicken stock.  Seasoned with S&P, garlic powder, red pepper flakes, and some italian seasoning.  Then I added in a bit more chick stock and some soy sauce for extra flavor.  So good!

And I was inhaling my plate.  Not even bothering to make conversation with my husband! :O

Then I went back in for some pasta because it was fantasic.  My eyes were bigger than my bellah though and I did not eat all of the second helping.  I didn’t eat all of my tuna either, I left about 1/4 of it.

It was awesome and I’m very pleased with my meals today!  Totally makes up for yesterday’s craziness.  Now I’m off to read a bit before heading to SF class.  See you tomorrow!
