February 22nd, 2009: Dinner

Hi guys!  Scott and I braved the elements and got Rocky walked.  It was nasty outside.  Windy and snow changing to rain and then back to snow again.  It’s been doing that most of the day.  When I took Rocky out after dinner, the deck was covered in snow with a layer of ice under it.  Loverly.  So glad I decided on a summertime dinner theme!  And it was a first for me and I admit I was a little nervous.

Beer can chicken! Doesn’t it look funny sitting like that?  Well Scott and I don’t drink beer from a can so it’s actually a pop can that I put beer in.  We have 7up at the house in case we have someone over who drinks pop.  I dumped out the 7up and filled the can half way with Killian’s.  The chicken also had a nice rub on it that it got to know all day long in the fridge.  In the bottom of the roasting pan was a little more beer, chicken stock, and some buffalo sauce.  And carrots, celery, and a jalapeno just for an added kick.

For some odd reason I had visions of the can exploding and chicken flying all over the oven.  I have no idea why I was nervous about making this!  Nothing exploded and the chicken smelled awesome as it was roasting.  Allowing the chicken to roast this way means every bit of it gets crispy golden brown.  The smell even woke Scott up from his nap! :p

To keep the summer theme going, we had baked beans on the side that I added some limas to for extra bean kick.  And some homemade coleslaw.  YUM!  The chicken was really moist from the beer steam which I was pleasantly surprised by.  I didn’t brine the bird first and I was worried it was going to be dry.  Not so, and it was very tender resulting in it being super tasty.

While the chicken was roasting I had three 7 grain pretzel sticks and some raisins with seltzer. I forgot to download the picture though so you’ll just have to imagine it. :p

Now I’m off to relax on the couch with my hunnies for the rest of the night.  Hope you had a great weekend!

  1. dang that beer can chicken looks pretty nice and roasty toasty. I made some butterflied chicken in the oven the other day and it didn’t look half as nice as yours. I’m going to give that a try – plus I just bought some canned beer (Sapporo) today =)
