December 24th, 2008: Lunch and dinner

You all know I went running.  I saw a break in the rain and quickly changed into running gear.  I only did a short 2.5 miles today because I’ll be running more since we’re off for holidays.  Good thing I only did that because I made it back home as it was starting to sprinkle.  By the time I was upstairs getting ready to shower it was pouring again.

It’s been go, go, go all day!  I did some food prep and then made us lunch.  Easy leftovers.  I realize how much pasta that looks like but it was mostly sauce. :p  And there’s some clementines in the middle.  I had all my pasta and a good bit of clems.

After lunch I talked with my mom because she got her package I sent.  I also talked with my bestest bud, Bev.  *waves*  Hi, Bev! :D  And then it was more food prep!  Then I took a break to cut Scott’s hair, it was crazy out of control.  While he was showering and what not, I wrapped Rocky’s gifts including the big gigantic one.  Oh he is going to be so surprised! :lol:

Then I made us a cheese plate!  See while everyone was snacking and indulging on sweets and cookies, I was biding my time till I could have this!  Wine and cheese. :woohoo:  That’s my weakness and what I was looking forward to.  You can expect to see this again over the next couple weeks.  Starting at the top and going clockwise:

  • Pistachios
  • Parrano Cheese
  • Kashi Garlic and Thyme crackers
  • Kashi roasted veggie crackers
  • White cheddar
  • Kashi sesame crackers
  • Salsa and cream cheese mix (most for Scott)
  • Apricots

That is one of our favorite wines and the bottle is so big it doesn’t fit in the picture!  Just to give you an idea how big it is, here’s the bottle next to a regular bottle of wine.

I know! Crazy!  And no we will not kick that in one sitting. :lol:

Scott and I hung out and chit chatted until the snackies settled and we could move on to dinner.

Seafood!  My dad said that when he was growing up they always had seafood on Christmas eve.  I thought that was a nice tradition and decided we should have some too.  Here’s to you Daddy R!  I found these gigantic scallops at Sam’s.  Wildcaught in the USA.

So I saved them for today.  We had scallops just sauteed in olive oil seasoned with seasalt, pepper, garlic powder and a bit of soy sauce.  And some tilapia filets that I baked in the oven.  Each is topped simply with some seasalt, pepper, garlic, and chili powder.  The fish I brushed with a small amount of butter and baked at 400 till flaky.  On the side is some roasted brussel asparagus.

These were by far the best scallops we have ever had anywhere.  They were so awesome!  Thankfully this wasn’t the whole bag so there is still some left for another special day.  Hooray!  I will be dreaming about them for a while. :p  I ate all of my fish, left two of the asparagus, and left 3/4 of one scallop.  That was a lot of food for me and all the cheese beforehand, so I was stuffed!

Now it’s time to get snug and ready for the big day tomorrow!  I’m still planning a run, it’s not too late if anyone wants to join me. ;)  I’m debating on taking Rocks for a quick walk so if I do, I’ll come back in and change my booty buster points to show that.

  1. Those scallops truly give new meaning to the word ginormous! Did you know that is an actual word?!

    I have recently fallen in love with the “wine and cheese” thing. It’s amazing! Have a VERY MERRY CHRISTMAS, Andrea!
