November 13th, 2008: Lunch and dinner

Hi guys! I have been going going going nonstop it seems! After posting breakfast and getting Scott up, I did some dishes and then cleaned the house. Weekly cleaning routine of scrubbing the bathrooms and kitchen. I also got a chicken started in a brine for dinner later. I got a little hungry and since I thought we were going out to lunch for some soup, I had a small snack to tide me over.

It was half a PB Z bar and some raisins.

After I ate that, I took a nice hot shower and got dressed for the day. Once I was dressed, both of us were really hungry and Scott wasn’t feeling up to lunch out. I made us a quick lunch at home instead. He had some organic spaghetti O’s which I added some kielbasa to for extra punch.

I had a carrot and some multi-grain chips with salsa on the side. Also a piece of whole grain bread with a slice of deli ham and pepperjack on top. I toasted that in the toaster oven for about 5 minutes. I also had three small bites of kielbasa because I cannot resist it! Then the other half of my Z bar. I only ate maybe three chips and a little salsa. The chips are only okay but the salsa is icky. It’s 365 brand and it just has a manufactured taste to it (Sorry WF!). That’s why I fell back on the other half of the Z bar.

Scott got dressed and we were out the door for a quick grocery trip. We only need a few things to tide us over till I do a big shopping trip closer to T-day. We needed some veggies and other staples. The thing that took us the longest about the trip was the checkout! Holy cow but our cashier was sloowwww. But he was really nice so it’s all good.

Once we got home, I put everything away and pulled out the chicken. The plus side to brining a chicken is that it doesn’t take forever like a turkey does. It only takes a few hours. I got the chicken prepped and roasted that bad boy for about an hour and a half. As it was cooking and I was making other things, I picked at these.

I had 1.5 pieces of cheddar and 3 of those rice crackers, the rest went to Scott. The chicken smelled amazing as it cooked and I couldn’t wait to dig in. I was so glad we were having it tonight! I originally planned on having it Friday night but since we didn’t go to MT tonight because of Scott’s cold, I figured roasting it tonight would be a nice treat.

Doesn’t it look awesome! My very favorite thing to do is spend the day cooking in the kitchen roasting something. It feels so homey and cozy to me. Plus it fills the house with amazing smells while it cooks.

On my plate is a 1/4 piece of breast (removed the skin once I started eating), some carrots and green beans, and a scoop of garlic mashed potatoes. I added gravy once I sat at the table. I had another 1/4 piece of chicken and finished everything on my plate. It was so good, I was in heaven. The chicken came out perfectly and I am going to try and brine them from now on! I had a good amount of food too and did not overstuff myself. Ew, I hate that feeling.

Now I’m off to hit the couch and have a drink. I haven’t decided what yet but it’s for Gina who had a birthday yesterday! Wednesday’s are not drink nights for me so I’m having one for her tonight! See you guys tomorrow!
