November 12th, 2008: Lunch and dinner

Hi guys! I have been a busy multitasker today! However I still have loads more stuff to do around the house which I will be doing the rest of the week. Let’s talk about lunch!

Along with his sore wisdom tooth, Scott now has a cold. :( I wanted to make him something special for lunch but today is technically a veggie day so chicken soup was out. I will make that for him soon though! I flip-flopped on what to make and finally decided on the Gardenburger BBQ riblets. Have you ever had these? I love them! No, it doesn’t taste like ribs, but it makes for a nice warm sandwich and the BBQ sauce is very tasty. We had that in 1/2 a WW pita along with some carrots and sliced apple. YUM!

After lunch I cleaned the house a bit (dusting, vacuuming, etc.) and then did a little bit more work. I started getting a little snacky around mid-late afternoon and I knew I would not be able to hold out for dinner.

I had some raisins, dates, and some smoked almonds. I only ate one of the dates because they were just a little too sugary sweet for that time of day for me. Normally I love them but today was just eh.

That lasted me for a little bit and then it was time for me to get started on making dinner. Most things I already prepped, the only thing I had to make was the rice.

I made us some sweet potato tacos! I know it sounds totally bizarre (or maybe not?) but they turned out really yummy. I need to fiddle with the recipe a little more before I can post it but I’m on the right track. The tacos had mashed roasted sweet potato, pinto beans, salsa, and some shredded cheese. Scott also had sour cream on his. On the side is some jasmine rice mixed with a little salsa, corn, and some more pinto beans. In the middle is some salsa and chips. So good! I ate everything on my plate and about 5 pieces of tortilla chips. I say pieces because they weren’t whole chips, but broken bits.

My poor hunnies. :( He so doesn’t feel good and I know he’s miserable. I’ll probably make him some tea later and fix him a lil’ snack before shipping him off to bed.

Now I’m off to go and do some more stuff around the house. Catch you tomorrow!!
