October 15th, 2008: Lunch and dinner

Hi guys! Lunch was a much more satisfying affair this afternoon. Thank goodness! I don’t think I could deal with two meh lunches in a row.

The salad was inspired by last night’s salmon. Remember I only ate half of the fillet? Well part of the reason is because I wasn’t hungry anymore and the other reason was because I wanted it for leftovers! :p I was dreaming about that salmon all day. Mmmm! So I made a good sized salad with it. The salad had:

  • Romaine
  • Chopped savoy cabbage (raw not cooked)
  • Red onion
  • Broccoli
  • Pumpkin and sunflower seeds
  • Crumbled leftover salmon on top

Dressed with some WF wasabi dressing. It was awesome! I almost got all selfish and didn’t give Scott any of the leftover salmon. Hey he ate all his last night! This was my leftovers. But I gave him some cause he’s my hunnies. Although I did take the bigger half! :D In the back there is a chopped up red pear. I ate all my salad, all that pear, and then picked at the salmon in Scott’s salad because he didn’t eat it all.

The best part was that the salad totally filled me up and kept me full for hours! Usually salads only last me a short time unless there’s a hefty portion of protein in it. This one hit the spot and lasted me till dinner.

After lunch I did some maintenance stuff and worked on my FoodBuzz profile. Any one else use Food Buzz? I’m still figuring everything out and learning how to use it but so far it’s pretty neat. I do find it a little hard to search for specific people but I think that could be more related to the fact that I’m still learning. Let me know if you’re on there so we can friend each other!

Dinner was an experiment tonight. I had an acorn squash that needed used up so I roasted him. I used my little rice cooker again and made some brown jasmine rice with it. That turned out okay but I probably could have added a bit more liquid. So dinner was stuffed acorn squash (I had a 1/4 of the squash) and some sauteed kale. I started the kale off in some hot water because it had been sitting in the fridge for a while and I knew it would be a tad more bitter. After it cooked, I tossed it in some olive oil, grated garlic, TBSP of mustard, and a wee bit of stock. Let it cook a bit, then serve. It turned out yummy and dinner over all was a really good meal. Both of us really liked the acorn squash and I will definitely get it again.

Now I have to get ready for SF tonight. *fingerscrossed* That we won’t be out too late. Especially since we want to watch the debates. I’m going to set it to tape just to be on the safe side but for sure I’m looking forward to sitting in my jammies and watching TV. I’m thinking I might make some more “presidential popcorn” for tonight. :p I have been craving popcorn for a while but haven’t had an occasion to eat it. Tonight might be it! See you later guys!

    I never really want to share leftovers with Rob because I live my life watching my weight and he doesn’t care and for that reason, I get the leftovers.
    Ha!
    I don’t get what food buzz is, really.

  2. Heather, I’m really starting to enjoy squash too! I’ve been trying new things and squashes are on the list!

    Erin, I’m still learning my way around it but it seems like a good resource for connecting to other foodies.
