September 25th, 2008: Lunch

Hi guys! I’ve been busting my hump over here but I don’t know if I’ll finish everything on my to-do list. Boo! I need to get moving even faster I guess.

My oats didn’t hold me over very long today. I have that problem with oats and I don’t know why. They just don’t take me all the way to lunch. Either I need to eat more or maybe I need to up the protein in my breakfast?

I needed a snack and this crisps were calling to me. Have you ever had them? They are awesome! I bought them at WF a while back. I like them plain, with jam, and even with goat cheese. Mmmm!

It never fails, whenever I make mashed potatoes I always make way too much. Then I have leftovers and I wonder what I’m going to do with them. Sometimes they get eaten with the next night’s dinner but sometimes they don’t. I hate throwing out food and have since vowed to always try and do something with my leftovers.

Thankfully mashed potatoes are a dish that can be easily and quickly turned into something else. They can go the savory route or, believe it or not, the sweet route. I typically stick with the savory road myself. I love mashed potatoes. A comfort food for me that I often turn to when I need a big comfy sweatshirt and a hug.

This is a recipe I created so that I could use up the small amount of leftover mashed that was sitting in my fridge. The rest of the meal that accompanied the potatoes had been eaten and they were all that remained. I pulled out some other things from the fridge to add to the potatoes and my little potato puffs were born.

September 25th, 2008: Breakfast

Good morning guys! I am a bouncing bundle of energy today for some reason. Maybe because I was in bed by 9:30 and asleep by 10:30? Before going up to read I made Scott and I some quick drinks to sip.

Half mandarin flavored seltzer + half limeade with a lime wedge squeeze on top. Yum! It was really light and refreshing. Probably one of Scott’s favorites so far. Sipped that while we watched a bit of TV. Then it was time to go read.

I slept awesome last night and woke up before my alarm went off. I decided just to get up and get started on my day. I have a big to-do list that I want to tackle.

This is what the sky looked like this morning when I got up. This is one of my very favorite things about fall, the way the sky looks. I love the inky dark blue color of the sky and how everything else takes on a silhouette appearance.

September 24th, 2008: Dinner

Well my apple chips were a bust. Boo! I might have over cooked them or over dried them or whatever. I’ll give it another go and if I still don’t like them then I’m considering this particular experiment a wash. I did some site stuff instead of cleaning and organizing around the house. Which will then force me to do it all tomorrow. I don’t usually procrastinate but I’m all over it today for some reason.

I started getting a little munchie in the afternoon and decided to have some Kashi crackers.

Those did the job until it was time for me to start supper. I wanted something filling but something loaded with veggies. I’m on a huge veggie kick this week and since we’ve been having meat so much lately it was time to take a break. Dinner ended up being ready way before I expected it to be. When I told Scott he said, “That’s okay!”

September 24th, 2008: Breakfast and Dinner

Hey guys! I must be in some kind of funk because again I did not want to get out of bed this morning! I was totally rationalizing too. “Oh my legs are still sore. I should take it easy.” “I could use the sleep.” Enough! I shut myself up and got out of bed. It was chilly this morning. Last week Scott and I donated four huge trash bags of clothes to AmVets. As we were going through the clothes I saw a top that I thought might come in handy so I pulled it back out. It’s a long sleeved tee-shirt type top that is very thin, it would be totally see-through if it wasn’t blue. I thought it might make a nice top for running in the chilly mornings. I threw that on this morning and was out the door after I took care of Rocky.

It worked out so well! Kept my arms warm but wasn’t so heavy that it weighted me down. I was able to wear it my whole run. I did a short run this morning, my old route. I didn’t want to risk over taxing my legs. They are doing much better today though still a bit sore. I felt good after the run and downed my CS in no time flat! Back out the door for Rocky’s walk. We did an extra long 30 minute walk this morning. It was so nice and I may do that from now on.

September 23rd, 2008: Lunch and dinner

Guys, I had the best food day today! So many yummy things!

When lunch rolled around I was starving. I could not wait to eat! I wanted something big and knew I had to use up the last of the leftover turkey. I didn’t want to throw it away. After thinking about it for a bit I decided to make a wrap using the leftover turkey, some kidney beans for extra protein and fiber, and the rest of the jar of salsa sitting in my fridge (about 1/2 cup). I mixed that all together with some cilantro and lunch was born!

I chopped up some romaine and laid that down then put the turkey mixture on top and rolled it up. Holy cow this was awesome! It was light and cool but a very filling meal. I will definitely be making this again. I know they are blurry, but in the background are leftover zucchini and squash and some cantaloupe and peaches. I ate all of my wrap except for a few bites at the end which was just tortilla, most of the squash/zucchini, and a few bites of the fruit duo. I wish I had leftovers of this. It would be great to just mix in with a salad too! Maybe add some corn in there as well.

I am not mustard’s biggest fan. There are occasions where I need mustard as a side to something, such as kielbasa or other types of sausages. And there are occasions where I need mustard as an ingredient to something, such as salad dressing. But mustard is typically not something I reach for first for sandwiches or as a topping to burgers. I am a mayo girl.

However, Scott is a mustard kind of guy. He goes for mustard first on sandwiches or to dip a bite of lunchmeat into. Because of this, mustards have become something that I pay closer attention to. Yes, my husband will gladly accept regular yellow mustard on his sandwiches, but sometimes I like to spice things up for him and make things a little more interesting. As a result I have started liking mustard more and more.

Exploring different types of mustards, I have learned that I personally enjoy a spicier grainy mustard as opposed to a smooth mustard for sandwiches and as a dip for sausages. I really like a good honey mustard for chicken. One that is thick and creamy that hits you with sweetness first and spiciness last. Mustard, something I never though I would enjoy, I now actively seek out. Thanks, Scott!

September 23rd, 2008: Morning

Hey guys! I am feeling a little blah today. I’m a bit tired (due to hormones, I believe) and sore from yesterday’s PT workout. We went to SF last night and didn’t get home until 9:30ish. By the time Rocky gets his evening walk and we are changed into jammies, it’s usually going on 10pm. That’s so late! I want to be in bed by then already, not just starting to get ready for bed. I wish class was earlier.

I was tired and a bit sore last night when I got home. I was sore from PT, my legs were stiff and my shoulder and shoulder blade areas were really sore. I have no idea what caused that since I worked legs yesterday. In SF we did some joint locks and my wrist ended up being a little achey. All I wanted last night was something indulgent and delicious before heading to bed.

September 22nd, 2008: Dinner

Hey guys! All laundry is done for another week, hooray! My legs so far seem to be doing alright until I hit the stairs. Going up stairs takes me a little bit longer. :p

I worked on some site maintenance things and before I knew it, it was 4:30pm. Yikes! I needed to get started on supper. Normally I start cooking at 4pm. Thankfully most of what we had were leftovers so I didn’t have to make too much. As I was pulling everything out, Scott came in the kitchen and started nibbling. I understood how he felt, I was hungry too. :D

Yummy dinner! On my plate is some of the turkey from last night with a bit of gravy. A small dollop of mashed potatoes also with gravy. Some carrots and some zucchini and summer squash that I sauteed up in some olive oil and seasoned with S&P, garlic powder, and some Mrs. Dash Italian blend. I love summer squash and zucchini so much. I’ll take it anyway you serve it, but sauteed is my favorite.

September 22nd, 2008: Breakfast and Lunch

Hi guys! I tried my hardest sleeping in till 8am today but Rocky wasn’t having it. I got up around 7:30ish and got the day started. Had to turn the air on for a bit last night, it was really stuffy in the bedroom. I knew it would cool down eventually but I didn’t want to be hot while sleeping. The mornings and evenings have been cool but the days are still pretty hot.

After taking care of Rocky it was time to fuel myself before PT. I had my morning coffee + regular creamer and a slice banana with four scoops of yogurt and about 1/4 cup of the bare naked granola. I relaxed a little bit surfing around and then it was time to head to PT already. Eeep! Maybe I’ll just get up early everyday because I sort of felt like my morning got away from me today.
